Easy Raisin Soda Bread Recipe

Here is another great recipe from Gifts A GoGo.  Let me just say one thing, I have never made a loaf of bread in my life, this not only looked beautiful, it tasted fantastic too!  That says a lot for this recipe which my son brought home from culinary class.  I found this very easy to do and I really wish they would invent Smell A Blog because the entire house smelled like a bakery.  Unlike many soda breads I have tried, this one was not dry at all, had a really nice texture and a hint of sweetness.  I plan to make this again Easter morning.  It would go wonderful with a cup of coffee.  That being said here is this wonderful recipe.

Ingredients – Makes one loaf

  • 3 1/2 cups flour
  • 1/2 cup sugar
  • 1/4 teaspoon baking soda
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 4 tablespoons (1/4 cup) unsalted butter softened
  • 1 cup raisins
  • 1 cup buttermilk
  • 1 egg

Preheat oven to 350 degrees

In a large mixing bowl, combine flour, sugar, baking soda, baking powder and salt.  Mix well.  Add butter to dry mixture and blend well.  Stir in raisins and set aside.  In a small mixing bowl, whisk together egg and buttermilk then pour mixture into dry ingredients.  Mix together with wooden spoon until blended enough to grab with your hands.  Turn dough out on to a flour surface and fold over and knead several times.  Shape dough into circle and cut a cross on top of bread.  Place on a non-stick or well greased cookie sheet and bake for 45 minutes.  Optional: you can brush with butter after about 15 minutes of baking time to give it extra flavor.  If you would like a nice shine to your bread, beat an egg and brush on bread the last 10 minutes of cooking.   After brushing on the egg wash, you can sprinkle some sugar to give it a little extra sweetness.  See illustrations below…
