Here is another great recipe from Gifts A GoGo. I am a big fan of breakfast foods, so when my friend passed this recipe on to me I just had to give it a try. Let me just say, it was fantastic and really easy to make. The entire family loved it. This would make a wonderful dish for special occasions, Mothers Day, or when you just want an alternative to that bowl of cereal. I made them in individual casserole dishes they are the same size as ramekins about 5 inches in diameter. If you like, I see no reason why you couldn’t use a regular baking dish. This recipe made four individual casseroles an 8 x 10 baking pan should be fine. Note: The original baking time on this recipe was 45 – 50 minutes. I found this a bit long, so I adjusted the recipe below to 35 – 40 minutes. Keep an eye on it so your sausage doesn’t burn, ovens do vary.
What you will need:
- 8 eggs 1/2 lb Italian Sausage – I used Mild
- 1/2 cup diced onion
- 1/2 cup diced red pepper
- 1/2 cup milk
- 1 1/2 cup shredded sharp cheddar cheese
- 4 cups cubed bread
- Salt and pepper about 1/4 tsp each
Preheat Oven to 350 Degrees Grease ramekins and layer each one with bread and cheese. I used cooking spray and it worked well. In a medium skillet brown sausage and add bell pepper and onion after sausage has started to render a little fat. When sausage is browned, drain some of the fat. In large bowl combine eggs, milk, salt and pepper. Mix well. Pour egg mixture over bread and cheese. Top with sausage mixture. Bake for 35-40 minutes. See illustrations below.
